Autumn Harvest Soup: A Recipe That Changes Every Year

There is no authentic version of this soup. Last year it was kabocha, ginger, and the last of the shiso. The year before, a cloudy miso with mushrooms we found after rain. The method is the same. The garden decides the rest.

Base: one onion, slowly. A piece of kombu if you have it, pulled out before boiling. Water or a light vegetable stock. Whatever squash or root is heavy in the basket. Salt at the end, not the beginning. A spoon of miso off the heat, so it stays alive.

If guests have been in the garden that morning, they usually know which vegetable they want in the pot. Children are surprisingly decisive. Adults hesitate, then pick the thing they have never cooked. Both approaches work.

Serve in whatever bowls are clean. Eat it with rice, or with bread Shem baked if the weather was right for the wood oven. The recipe is a permission slip: cook what you have, in October, with people at the table.
